I need a recommendation for a caterer to do an authentic crawfish boil for my rehearsal dinner. I would like them to bring all food, beverages, chairs, tent, etc if possible.

I'm looking for the same thing!
Try Pigeon caterers...they can do something like what you need, they were a little too expensive for me.

Authentic is the operative word, I was in Shreveport, and had some of the worst crawfish ever, they boiled them in flavored brine, and shook seasoning on top, you had to lick your fingers before you ate the meat! Don't try to suck the head!! BLLAAAARRRGGGG!

For what date?
If you want good crawfish, you are probably going to want to purchase it separately from wherever you're renting your setup from. Perino's on Westbank Expressway, De-No's on Gretna Blvd, and Zydeco's on Belle Chasse Hwy have some of the best. They're all on the Westbank, but totally worth it.
ETA: Are you local, or are you having a DW in New Orleans? If you're not used to eating crawfish, you're going to be eating for a loooooong time. And don't rub your eyes!

Very true on the LOOOONG time, as it is a social event, more than just a meal... Almost a Sacramental event...
