My FI and I are starting to look for photographers and we ahve a couple  that we have emails into, but I'm a little lost when it comes to what questions to ask so I can make the best possible choice.

Ask them if they bring an assistant or how many photographers will be there; if there are any incentives (for example, my photographer included an engagement session in our package); how many hours are included; if their packages include the rights to the photos

Ditto on the rights to the photos. Ask them if you get a high-resolution CD of all the wedding photos. Don't be afraid to negotiate their photography packages. I told mine I didn't want the wedding album, I just wanted the photos on a CD so I could make my own. This way I didn't have to pay extra.

And you should meet with your final choices in person to make sure they are a good fit for you and your wedding.

Ask to look at complete albums from other weddings they've done. Albums that show only "best-of" pictures aren't really an accurate representation of their work. They should be able to see from beginning to end how their work looks and feels.

This is SO important.  We met with one photog that we really liked and noticed that a few of her albums had turned out "fuzzy."  I was actually a bit surprised that she chose to show those to us and made no comment about how they looked.  Needless to say, we did not end up going with her :)

Look for limitations.  If they limit the number of hours, the number of images, the amount of time the images are hosted online or anything else - ask why.  If you pay over 2k you should absolutely get the discs of every finished image.  Ask about hidden fees like touch-ups or travel fees and such.

Also ask if they are insured...what happens if they are sick...what are some challenges they don't like dealing with at weddings...ask about if they have a solo shooter policy (like are they unwilling to work if you have a videographer)....
