maybe contact other churches in the area with the same denomination? Or even ask your church. I'm sure they have backup organists :)

I don't know if you've found anyone yet, but I highly encourage you to look up Lynn Kozlowski. She is an organist at many Milwaukee churches and weddings. I went to St. John's Lutheran church in Tosa a while back. They had several organists, and she was by FAR the best. She is so very talented. Look no further.
