I'm from New Orleans, so the short list I was given had things like crawfish pies, southern fried catfish, mini muffelatas, bacon wrapped shrimp, etc.  I'm looking for something a little more elegant than crawfish pies and catfish.  He said that he could make anything I ask for, those are just popular options I guess.

Peavy, I like your idea with the different meats and vegetarian options.

Anything more specific? What are you serving?

Chicken satay with a peanut sauce is delicious - if they don't overcook the chicken.

I've had balsamic marinated veggies (marinated, cooked, and served cold): grape tomatoes, asparagus, squash, mushrooms - it was delicious!!!
