For the photographer: ask to see an entire wedding from beginning to end so you will see how they will capture the day. If you could see a wedding shot at your venue, or with similar lighting conditions, even better. A good photographer will do most of the talking.

ask about meal preferences, ask about hours, ask about second shooters, ask about when the latest they are willing to work to, ask about engagment sessions being included, ask about how long it takes them to get the photos back to you....everything should be in your contract, but those seem to be the ones photographers and brides dont always remember about.
