Recipes

 Who has any fun and yummy recipes they want to share?  I love sharing recipies and getting new ones, so here is one of mine. 

Tuscan Chicken:

·         Pasta                    

·         Flour                     

·         Chicken cutlets cut to bite sizes                

·         Sundried Tomatoes       

·         Olive oil

·         Spinach                               

·         Roasted red pepper                                      

·         Basil and Parsley

·         Roasted Garlic (Crushed)

·         Chicken Broth                                                   

·         Cream soup (1 can of asparagus/broccoli or celery)

 

1.       Dredge chicken in flour(you can season the flour if you want)

2.       Sauté in olive oil- add veggies and garlic

3.       Add some chicken broth-pour cream or creamed soup over it.

4.       Cook pasta, like fusilli or penne and add to mixture.

    Ahh, I have so many!! But the first one that came to mind is Gumbo, since it represents my cultural heritage and is so good this time of year :) 

    Chicken & Sausage Gumbo

    Serves 12

     

     1 cup oil

     1 cup flour

     2 large onions, chopped

     2 bell peppers, chopped

     4 ribs celery, chopped

     4 - 6 cloves garlic, minced

     4 cups water

     4 cups chicken stock

     2 bay leaves

     2 teaspoons Creole seasoning, or to taste

     1 teaspoon dried thyme leaves

     Salt and freshly ground black pepper to taste

     2 pounds chicken cut into pieces (boneless chicken breasts or thighs)

     2 pounds andouille or smoked sausage, cut into 1/2" round  pieces

     Filé powder to taste

     

    Season the chicken with salt, pepper and Creole seasoning and brown quickly. Brown the sausage, pour off fat and reserve meats (set aside in metal bowl).

    In a large, heavy pot, heat the oil and cook the flour in the oil over medium to high heat (depending on your roux-making skill), stirring constantly, until the roux reaches a dark reddish-brown color, almost the color of coffee or milk chocolate.

    Add the vegetables and stir quickly. This cooks the vegetables and also stops the roux from cooking further. Continue to cook, stirring constantly, for about 4 minutes.

    Add the stock, seasonings, chicken and sausage. Bring to a boil, then cook for about one hour, skimming fat off the top as needed.

    Add desired amount of file powder, stir well and heat for 5 minutes. Serve over rice in large shallow bowls. Accompany with lots of hot, crispy French bread.

  • Most of my recipes get stolen from all recipes. The only one I have that is mine is for chicken paprikas. Very simple.

    1 Saute onion in butter until it's nice and soft. The more onion, the better in my opinion.
    2 Add chicken breast seasoned with salt, pepper and paprika to the pan. Brown on each side.
    3 Add about 2-4 cups chicken broth. I like it soupy, so I go with 4 cups.
    4 Add paprika. Now add some more. Keep going. I use a mixture of sweet and spicy Hungarian paprika. Hungarian paprika is very important, sweet or spicy depends on personal taste.
    5 Simmer covered for 20 minutes or so.
    6 While simmering, make noekedli, also known as flour dumplings.
    7 Mix a jar of sour cream with about a tablespoon of flour. Add this very slowly to the chicken broth. Take the chicken breasts out to make stirring the sauce easier.
    8 Add more paprika until the sauce is a very deep pink. 
    9 Serve over noekedli.

    I just made this one. It is also just 1 weight watchers point in the right serving. 

    Pumpkin Spice Cake (muffins)

    1 box of spice cake
    1 can of pumpkin (15 oz)
    1/2 cup of water

    fat free cool whip

    Mix the first 3 ingredients. Follow baking directions on the back of the cake box. Let cool and top with cool whip when you serve it.

    I have used cream cheese icing as well.

    Yummy! Recently my favorite recipe has been for balsamic chicken, but I like it without the chicken. (It just always seems dry to me.) If you just google it, there are tons of recipes, and most are the same. Super easy to make on the stove or in the crockpot and so tasty!

    Off the top of my head, just use one can of diced tomatoes, and half of a small onion, season with italian seasoning, pepper, little bit of garlic salt and about 1/8C of balsamic vinegar maybe a little less. Sautee until the onions are done. Serve over pasta. :)

  • I made these meatballs the other night for dinner. They were DELICIOUS and so healthy. FI raved about them. They were super easy to make and were very moist from the vegetables. They were even great the next day as leftovers. 


    Turkey and Veggie Meatballs

    Ingredients

    • 1 1/2 pounds ground turkey
    • 1/2 cup dry breadcrumbs
    • 1/2 cup (2 ounces) finely shredded fresh Parmesan cheese
    • 1/3 cup finely chopped green onions
    • 1/4 cup coarsely shredded carrot
    • 1/4 cup coarsely shredded zucchini
    • 1/4 cup chopped fresh parsley
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper
    • 1 large egg white
    • 2 garlic cloves, crushed
    • Cooking spray

    Preparation

    Preheat oven to 400°.

    Combine all ingredients except cooking spray in a bowl; stir well. Shape mixture into 30 (1 1/2-inch) meatballs. Place on a broiler pan coated with cooking spray. Bake at 400° for 15 minutes or until done.
