My fiance and I are going to meet with the wedding coordinator at the venue we are leaning towards this Saturday. I already have all the pricing info for the rental and what it includes, but we need to discuss food options and pricing.

I am asking for tips and suggestions for what kinds of questions to ask him when we meet. I want to cover a lot of ground and ask informed questions.

Their website lays out itemized lists of fees so I feel like they are very open about what they charge, but I want to ask the right questions to avoid "hidden fees."

Also, we want to see about doing an "hors dourves" and dessert reception, and skip the plated meal. Is there a way to ask about this without sounding cheap?

Simply say "Are there any other charges besides the ones listed?"  Some that I have seen are cake cutting, chair removal/placement, charges for using an outside vendor, preset table settings, coat check, etc.

"We don't feel a plated meal fits our more casual, laid-back style, do you have any other options?"

The one thing I want to point out (which I didn't know until my wedding coordinator pointed it out) is that many times the venue will say they can get chiavari chairs, or chargers, or linens and other things for you, which is all great, but you will pay the service charge on top of those items.  So if your venue's contract has a 20% service charge (which I thought was the tip) on top of what you pay per person, then that service charge will be on top of everything they order for you.  Most times you are better off renting them on your own.

We decided to do a buffet station dinner instead of a plated dinner for 2 reasons:
1) The weddings we have been to (and we go to A LOT) tend to have better food with buffet stations than plated dinners
2) It is cheaper!!!!

See if this is an option at your venue.  A lot of places are starting to do this because people like it better for the quality of food and the price.  It is more formal than a buffet dinner, but more informal than a plated dinner.

I don't think you will sound cheap at all! I'm from CT and if things like that are an option in CT and NYC - don't feel bad about asking about it!

^I love stations too. It's a nice middle ground between traditional and cocktail style, both of which we also considered.
