This is dinner tonight: It's something we make a lot because it's easy and delish.
So where are you going for your anniversary?
Jamaican Chicken Stew Ingredients:- Long grain rice - 2 tsp. Olive oil- 1 cup chopped onion- 1 large garlic clove, minced - 1 pound boneless, skinless chicken breast, cut into bite-size pieces- 1 tsp curry powder- 1 tsp dried thyme- ½ tsp ground allspice- ½ tsp crushed red pepper, or more to taste- ½ tsp cracked black or rainbow blend pepper, or more to taste - ¼ cup Cabernet Sauvignon or other dry red wine- 2 Tbsp capers- 1 (15 oz.) can black beans, rinsed and drained- 1 (14.5 oz) can diced tomatoes, undrained - Cilantro sprigs for garnish (optional) Instructions: 1. Prepare rice according to directions.2. Heat oil in large skillet over medium-high heat.3. Add onion and garlic, sauté 3 minutes until tender.4. Combine chicken, curry powder, thyme, allspice, red pepper, black (or rainbow) pepper. Add mixture to skillet; sauté 4 minutes.5. Stir in wine, capers, beans and tomatoes.6.
