You may want to check the offbeat bride section because I'm drawing a blank here.

Lantern favors could be appropriate for a medieval wedding. You could incorporate scrolls in the decor itself. This site has a few ideas to get you started as well: http://www.tangodesign.com.au/site/838692/page/522077

Goblets, Having a family crest or a crest of some sort, I think of big turkey legs!
Having bread to cut at the table, dresses with sleeves, mandolins?
Knights, Kings, Princess, Queens--Royalty?

Medieval, you mean?
Cuisine ideas: hog roast, or spit roast as that was a normal cuisine for the nobles (poor people couldn't afford meat, unless they were poachers. They usually had fish and vegetables they grew).
Drinks: well, water was never really clean enough, thus why they drank ale. I'd recommend foregoing that though as too much alcohol could have a bad ending.
Common associations with the medieval times:
Swords, shields, maces, armour, chainmail (ruddy heavy to wear), castles, moats. Horses. Musical instruments can be googled.
It may be worth seeing if any medieval fayres are going on anywhere near you, as I know there are still a few travelling ones.

look on the web for costume ideas and such. I found lots of places that will make dresses and clothing for midieval weddings. Circlet, and Crowns are always fun. most midieval weddings took place outdoors as well.
