There was a post regarding good winter menu options below, but I wanted to bring up the topic again :) We are meeting with the caterer this weekend and I dont know what I want! I was loving the soup idea... But our wedding is pretty formal, and it will be at dinnertime. So would soup, salad, and some other smaller items like spinach artichoke dip (our caterer has the best!), and bread... maybe anothe appetizer be enough?? If so... what kind of soups would be universal? Chicken noodle, broccoli and cheese, maybe one other more exotic... french onion or something seafood?

Sounds like a good lunch, but not for a formal dinner. I would include a hearty meat.

we're doing tuscan minestrone as our soup, and then a light house salad and then our entree's are a choice of: beef tenderloin, stuffed shrimp or walnut encrusted pork tenderloin (our wedding is new years day). all courses will be split up by a serving of lemon sorbet to clean the palate.

We're doing New England Clam Chowder for our soup course. 

Another idea is to pull in some winter drinks if you can, like hot apple cider or cocoa, instead of just tea and coffee with dessert.

I am considering either a butternut squash soup or spicy cheesy potato.

Seasonal and crowd-pleasing.  We are skipping the salad, and doing entrees after soup, then cake and coffee.
