Budget Caterer - Has anyone worked with these vendors/suggestions?

With a fairly large guest list (275-300) I'm determined to keep costs down by finding a caterer that can work with a $15 per person food budget or less. Does anyone have any feedback about the following or have other suggestions? Our reception is in Lake Geneva, WI. I would realy prefer plated sit-down.

I've never used any of your listed potential vendors for catering, but I have eaten at Beans and Barley and Napoli.  Both have ridiculously delicious food.
