Texas Ranch Style Wedding with max overnight capacity (Hill Country or other)

My fiance and I are looking for a place that we can get married on a Saturday, but also have gatherings on Friday (and maybe even Thursday) evenings with our guests. I am not finding many places that can accommodate 100+ guests for overnight as well as ceremony/reception. I am looking in the Hill Country, but I am not opposed to other areas in Texas. Any thoughts are appreciated!

Hi. If you're still looking, I had a friend who got married at the Hyatt Regency Hill Country Resort & Spa, and it was gorgeous. I know that she had at least 100 guests, probably more. They were married outside on a large deck with trees around the front, then had the reception inside in a ballroom. The hotel rooms were a bit pricey, even with the wedding discount, but we had a great time and definitely thought it was worth it!
