I sent mine to flowersintopaintings.com  They preserve the petals and greenery and use them in a painting.

I pulled the petals off mine and am putting them in a clear round ornament.  I'll use silver or gold to write our wedding date on it.

In Springfield, IL. where I'm getting married, there is a company that will take them and make beads out of them. You can use them for bracelets, charms, rosary, etc. I'm sure there are companies like this all over - try googling it.
