Can we get married in a church we've never been to?

Our wedding is in less than 2 weeks, August 16th and the ceremony was supposed to be held in Libertyville. The priest who was supposed to marry us contacted me today saying my fiance and I needed to sign the affidavit this week. However, that is a no-can-do because my fiance is a truck driver and is out of state. Not to mention, we live in southern Missouri and are getting married in Illinois because that's where we're from and that's where our family is at. So, basically, the priest said there's no way we're going to be able to get married on the 16th. We can't just change the date. Especailly after all this planning and people being invited and such. I was wondering if there are any churches (Christian) that can allow us to be married there at such short notice & that we've never been to in the northern suburbs area?

This church is not far from the Libertyville area (if that is where your reception is) and may be able to help.  They do have some requirements as well, but may be able to offer flexibility depending on your circumstance.

I am confused as to how/why your parish priest let this affidavit issue wait until the 11th hour.  Surely he must be aware of your circumstances and the fact that you are currently not in Illinois?  I cannot believe a priest would not offer some flexibility with this.  What/why is this so earth shattering that it cannot wait until you arrive in town for the wedding?  Why can this not be priority mailed (even at your expense) and returned in the same manner?  I am sure the priest would not want you to jeopardize the Sacrament of Marriage over the signing of a document.  What does this document state? 

I have to wonder if there is more to your story.

If you are willing to sacrifice your Catholic wedding ceremony, why don't you just see if you can arrange to have the ceremony at your reception venue?  That seems to be the easiest solution.
