What are some of your favorite recipes?  Or ones you have found/been recommended but yet to try?

Firecracker Salmon - one of our favorites!  I made it for a dinner party recently.  DH's best friend (a chef) even commented on how good it was. (insert pat on back)

Pan Glazed Chicken with Basil - VERY easy/quick and not a lot of ingredients

Buffalo Chicken Sandwiches - easy crockpot recipe
5 frozen chicken breasts
1 cup Frank's Hot Sauce
1/2 envelope Hidden Vally ranch seasoning
2 tbsp butter
Buns

Put chicken, hot sauce, and ranch seasoning in crock pot for 3 hours on high. Add in butter, shred chicken. Serve on buns, top with ranch dressing.

Parmesan Crusted Tilapia

1) Broil Tilapia fillets for 2-3 minutes on each side

2) Mix together 2 Tbsp light mayo with 2 Tbsp of Parmesan cheese, and 1 Tbsp of lemon juice.  Add whatever spices you like (I like garlic powder, pepper, and dried cilantro).  Spread this mixture on top of the fillets.

3) Broil for another 2 minutes, or until golden brown and bubbly.

This is easy, quick, and DELICIOUS.  I like to serve it with steamfresh microwave veggies.  And you have dinner in 10 minutes!
