chili for a crowd

H and I are hosting a chili NYE party next week.  I'm responsible for coming up with the chili, for a CROWD.  The chili I make is not for a crowd, and while I could double-triple-double it, I thought I should branch out and look for a new recipe.  anyone got something for me?

  • BF's makes a good chili but he uses vegetarian ground beef instead of regular ground beef so I can eat it. I don't think he has a recipe he uses per se.  He also uses a mango salsa which is pretty good and several different kind of beans, black beans, kidney beans, chick peas.

    Anniversary

  • This is my go to:

    1 to 1 1/2 pounds lean ground beef or turkey
    1 14-15 ounce can diced tomatoes (do not drain)
    1 four ounce can diced/chopped green chile peppers
    2 15 ounce cans kidney beans (if you double recipe, I just add one more can) (I drain off the liquid at the top of the can, but I don't drain and rinse them)
    1 cup water
    1 package Taco seasoning mix
    1 package Hidden Valley Ranch dressing mix
    1 cup frozen corn (or, if you prefer, one can corn, drained)

    Brown beef and remove excess fat. In soup pot or crock pot, add browned ground beef and all remaining soup ingredients. If cooking on stove, simmer for 45 minutes to one hour. If you cook it in the crock pot, you can cook this all day on Low, or half a day on High.

    Serving Ingredients:

    Tortilla chips
    Shredded Cheddar, Monterey Jack or Co-Jack cheese
    Sour Cream

    To serve:

    Crush a handful of tortilla chips and place in bottom of bowl. Top with Beefy Tortilla Soup. Sprinkle on the shredded cheese of your choice and a dollop of sour cream.

    I've doubled this recipe for a party and did a chili bar.  It's a basic chili recipe but people then can add whatever they want to suit their needs.

  • I would guess that recipe would serve 8 healthy portions.  Also make extra because it freezes really well.

  • It's really easy to make the hardest thing is browning the meat.  Oh and putting everything in the crockpot.

  • I always do: 

    1lb ground beef- browned with a big onion and some garlic cloves
    1 big can of tomato sauce
    1 big can of whole tomatoes
    2 cans of chilli beans
    1T chilli powder

    All in a crockpot all day. 

    It's a pretty standard and usual chilli, which is always good when feeding a big crowd! My family + a few friends have eaten it before and have still had leftovers. So, I would guess it feeds 8 or so? Maybe more.

  • Nom nom nom!  I just made this again last night: http://rita-may-recipes.blogspot.com/2011/11/crock-pot-cream-cheese-chicken-chile.html  It's fantabulous.  We serve it over rice, but I bet it would taste great with some small sized pasta mixed in.

    This sounds good as well!  I might try this one for our Super Bowl party.  What kind of extra spices and peppers do you add?  We LOVE spicy food!!!!

  • thank you all!  I ended up going with a recipe from a blog (sparkling ink) that looked good... and everyone loved it.  we have leftovers, so I suppose I'll freeze those and we can eat them later on in the month.  I didn't get a chance to look here again before the party, but I'll try out some of the other chili recipes this winter.  H loves his chili!
