When do you think I should start?

I bought small white boxes that I'm going to fill with me and my FIs favorite hershey kiss-carmel! But I'm not sure when to start making these.  Obviously I don't want to start now, because of it being chocolate.  I was thinking on freezing the candy until then.  But if I set the boxes up now, I'm afraid they might get smashed or something in the meantime.Should I leave this to do til the week of the wedding? I really want to get as much stuff done now as I can, but not sure what to do about this one.

First of all, do not freeze the chocolate. It will likely turn white! You could actually make them now as long as you have a cool dry place (such as a closet) in which to store them. If you are worried about crushing them, maybe get one of those big Rubbermaid tubs and stack them inside until the big day...just a thought

Oh my! I didn't know about the chocolate turning white if I froze them.  Do you think it would do the same thing if I just put it in the refrigerator?  The reason why I was going to freeze them was because I'm having an outdoor reception and don't know if it will be warm, or not, and don't want the chocolate to start melting.

I'm not sure....maybe put them in bowls set in ice to keep them cool?

I think I'll go buy some and try it out now several ways and see which works best.  thanks for you help!

Do NOT put it in the fridge either!  Just keep it in a cool, darker place til you are ready.  You will be dealing with condensation also if you chill the chocolate.  It should never be frozen or refrigerated.

lol ::fingers crossed::oOo what about using one of those pretty umbrellas over the table for shade? Maybe that will keep them from melting...

It's actually in an open-air pavillion, up in the mountains.  So I'm hoping it will be ok, but sometimes the weather in september can be strange.  My brother got married last year sept 13 and it was so hot and humid that day. hopefully it will be nice this year on sept 18!

I think it should be fine to work on in the next few weeks. You will have too many other things to do the week of the wedding and will need time to relax. We used Hershey kisses for my friends favor and did them a month before the shower. Just keep them in the air conditioning or away from the heat Have fun...
