They are fiddleheads.  Typically you see them in a grocery store while they are green, for floral arrangements they have more of a brown color.  They are very interesting, but very delicate and can break easily though.

Thank you! Everything I typed into Google turned up nothing that resembled it, then I finally found a Knot bouquet picture with it.
