Mexican food ideas for the reception?

My fiance and I have decided that we want to serve authentic mexican food, his mother is going to do most of it. We are just having a hard time finding something simple yet elegant. Not just like your basic backyard bbq... any suggestions?

Apps: Roll-ups with cheese, pico de gualo, & guac
Ceviche
Gazpacho shooters
Mini Empanadas

Entree: Enchiladas (easy to make before and heat in the oven)
Chiles Rellenos (also easy to make before and heat in the oven)
Carne Asada

Serve all the above with some type of rice & beans

Dessert - Tres Leche Cake

Apps: Nachos with queso, guacamole, pico de gallo, salsa
Mini burritos or empanadas

Entrees: Burritos, enchiladas, tacos (if there is a buffet), quesadillas

Sides: Rice, beans, sour cream

Dessert: Flan, sopapillas

Drinks: Tequila drinks, Dos Equis beer, mojitos

How many people are you serving? How will you keep foods at the proper temperature. This is a large feat to ask of the MOG and the family.

we did a traditional mexican food wedding. 

Appetizers:

Beef Taquitos
Ceviche served with chips and tortillas
various non mexican food items

Dinner

Pork Chile Verde
Chicken Mole
Spinach and cheese quesadillas
Rice
Beans
Tortillas

We aren't fans of tres leches cake, so we served a simple cake with buttercream frosting.

Drinks:
2 different Agua frescas
Sangria (white and red)
with other softdrinks
