Kosher brunch for the day after the wedding

I am trying to plan a brunch for the day after our wedding on July 3 for our out of town guests (which is pretty much 75% of them). It would be relatively simple, but it needs to be kosher. We don't want to do it at the Grand Hyatt and use their caterer because it's really expensive. It needs to be in Denver itself. I plan on putting together platters or having the East Side Kosher Deli do it, but I'm open to other ideas.

Does anyone have any ideas about where to have it and what I should do?
