Budget Caterer - Lake Geneva Reception

With a fairly large guest list (275-300) I'm determined to keep costs down by finding a caterer that can work with a $15 per person food budget. Does anyone have any feedback about the following or have other suggestions? Our reception is in Lake Geneva, WI so I'm looking for vendors in southwest Wisconsin or northern Illinois. I would realy prefer plated sit-down.
