This sounds like a possible solution - what do you think??

__#/__# seats have been reserved.  RSVP by MM/DD/YYYY

so if you were inviting Mr. and Mrs. Daniel Smith, it would state:

__#/2 seats have been reserved.

So they could either fill in 0,1 or 2.
