NWR Reduced fat or healthier version of mac and cheese

I am looking for a recipe that someone has tried and liked the end result.  DH loves homemade mac and cheese but I would like to try and make it with less butter and maybe reduced fat cheese and skim or 2% milk.  Thanks.

    I have a longer way to make it or a quick/easy way.

    The quick way is to cook the pasta (DO NOT OVERCOOK) I prefer elbows.
    Take package cheese (2% chedder pre-shreded) and a little skim milk and mix that up till its melted.
    Then I place that all in a baking dish.
    Top with more shredded cheese (2% chedder pre-shred)
    Cover cheese with Italian seasoned bread crumbs
    Sometimes to help crunch the bread crumbs I spray with a little pam olive oil
    Then I bake it and serve.
    I always cut the leftovers into portions and freeze for single portion re-heating.

    Thanks Laurie.  How much milk do you use?  Have you ever made it with whole wheat pasta?
