Lunch win

Last night I made a roast turkey breast and did mashed potatoes, stuffing, veggies.

Today I'm having a Thanksgiving sandwich with all of that on it. Delicious.

  • last night, i attempted to make roast chicken and cornbread stuffing.  after about 15 minutes, it smelled like rotten chicken so we had ham and cheese sandwiches for dinner instead.

  • Our dinner was kind of a fail last night.  We ate it, but it wasn't as good as I wanted it to be. 

    Also, any time someone mentions a 'Thanksgiving sandwich', I think of the Friends episode where Ross freaks out because someone ate his Thanksgiving sandwhich that Monica makes him with the gravy soaked center piece of bread he calls the 'moist maker'.  
  • I made chicken and dumplings last night.  It is one of my very, very favorite meals and something that I can make better than I can guy in a restaurant.  H is always very meh about it, but I don't care.  The leftovers are all mine this way!

    i am very interested in chicken and dumplings.  please describe this recipe in pornographic detail, like how a farmer would plow a field.

    But do you put the chicken and dumplings over mashed potatoes?  Or is that only a hilljack Midwestern carboverloader thing?
  • This board is the only place that I have ever heard of chicken and dumplings over mashed potatoes.  My home region of the Midwest has none of that.

    I cheat with the dumplings.  Kroger carries a frozen dumpling that helps me cheat.  I should try to make my own, but it seems like an ordeal because my exposure to it as a kid was 20 women in a church basement rolling out and drying enough dumplings for an army.  They used to feed hundreds of people with a chicken & dumplin' dinner every year.  Note that the fried chicken and mashed potato dinner was a separate event (and never the twain shall meet).

    But all I do is boil a whole chicken until the whole thing is falling apart.  S&P, garlic, and sage in the boil.  Then I pull out the chicken, strain the stock to remove random chicken parts, add water back in as the stock is usually a little thick by now, add parsley, a little basil, more S&P if needed, and then drop in the dumplings one by one.  Meanwhile, pull apart the chicken tear the keeper pieces into small bites.  Once the dumplings are done I add the chicken back in.  Sometimes I add peas, too.  Just to make it prettier.  And then I eat the entire pot.
