Tipping

We're getting married at The Garrison the first weekend of October and trying to nail down the tips we are budgeting for people.  The Garrison wedding is orchestrated by a banquet manager/matrie'd (Todd or Annie for anyone who knows it well).  We're working with Todd.  He's done a fabulous job so far and we want to treat him well.  Is 20% of the total food/drink bill what's expected?  Is that crazy high?  It's a lot of money to give one person.  Any thoughts or what are you tipping someone in a similar role? (The waitstaff and bartenders will be tipped separately.)
