NWR: Whats for dinner??

I have been watching what I eat very closely for the last 2 months..... 2 to go!!! My lunches and dinners have consisted of mostly salad with chicken, turkey, or chick peas...... Occasionally I will grill chicken and make veggies, but I am bored with the same old same old and I don't eat red meat..
Looking for some great options that taste great but won't sabotage all my hard work!!!!

So......... What's for dinner at your house tonight?

  • Oooh..I like answering posts in regards to FOOD! :) I'm addicted to chicken!
    Take chicken breasts/tenders (raw) and dip them in flour (whole wheat flour if you want), then buttermilk, then finely chopped nuts...place on a pan and then drizzle a little olive oil on them ..bake at 400 for 25 min! MMM!! SO moist!

    OR

    Make a concoction of sugar-free jam (boysenberry - Smuckers!) and balsamic vinegar...in a pan, cook your chicken breasts, then when chicken is finished cooking, pour sauce on top and let it cook/jellify a bit...so good ! It's like a glaze! :)

    I'm a chicken WHORE. I crock potted (I totally know that's not a verb :)) all these chicken tenders the other day with BBQ sauce + 1 tsp red pepper flakes + 1/2 C vinegar + 1/2 C brown sugar + a ton o' garlic - 6 hours on low :) MMMM..I'm starving now!

    As far as veggies are concerned, I take 2 cans of salt-free green beans and put them in a pan - cook them up with a TIDGE of olive oil, red pepper flakes, soy sauce, a wee bit o' Splenda (I have to see how much) and something else..makes amazing firecracker green beans! :) MMMM!

    Quit! I'm starving!

    Hey, homemade guacamole is crazy good too:
    1 avacado, cut up into little cubes
    Tomato - diced
    1 spoonful (or to your liking) of fat-free sour cream
    Garlic powder (to your liking)
    Lime juice (to your liking - and I like it TOO much!)..

    I've eaten them with Stacy's Pita Chips (from Costco - I think they're on sale with their coupons now too!), or on eggs or chicken :)
  • Homemade pierogis filled with sauerkraut, mushrooms, potatos, and onions! And some red velvet cake for dessert (I had to practice run my wedding cake and made a 10" layer of my two-layer cake.) I'm off from work for this week so all my labor intensive recipes are coming out- earlier this week, it was empanadas. I think tomorrow with be pasta with eggplant sauce (kinda phoning it in because I plan to be out most of the day, lol.)

  • I love it, Puppettrick! You cook like me!  Little bit of this, little bit of that and things usually come out great!  I'm good at looking in the fridge, freezer and pantry, pulling stuff out and putting it together.  It's one of my favorite things to do and one thing my fiance really appreciates about me!
  • Grilled Chicken and Kimchi Fried Rice from Trader Joes. 
  • We've been trying to cut back ont eh carbs. so its been a lot of salads for us as well and I was getting pretty sick of them
    Then I made these lettuce wraps they were SO good and fiance loved them:

    Ground Chicken
    1 tbsp peanut butter
    Soy Sauce
    Rice Vinegar
    Sesame Oil
    Peanuts
    Red pepper
    Water Chesnuts
    Scallions
    Red/Green Pepper

    You cook the ground chicken with the sesame oil (just a tsp or two)
    Then microwave the peanut butter for 10 seconds, add a tsp of soy sauce and a dash of rice vinegar and a pinch of salt

    After the chicken is cooked, removed from pan. Chop the peppeter and water chesnuts and some scallions and throw in to cook for 2-3 minutes- just so they are crunchy not soft
    Add the chicken back in and add the peanut butter sauce.

    Rough Chop a handful of peanuts...and throw them in
    Add in a dash or two of red pepper

    Get a lettuce like Boston Bibb or Iceberg and use as a wrap for these

    Drizzle with some soy sauce.

    Hey, thanks!! However, I usually need something to guide me - I can't just "Rachael Ray-it-up-quick-style," but I know some "tried and true" recipes which work for me! :) I LOVE cooking! And you can usually make ANYTHING good with garlic! ;)  What's your FAVORITE thing to cook?
  • Don't know if you like lamb but my FI favorite dinner is when I make lamb burgers with homemade tzatziki sauce. It is healthy but oh so tasty!

    Burgers:
    1 lb ground lamb
    2/3 cup breadcrumbs (I use the italian seasoned because that is what I always have)
    1/2 medium onion, diced
    2 tablespoons chopped fresh parsley
    4 teaspoons minced garlic (about 2 cloves)
    1 1/4 teaspoon dried oregano (fresh is better if  you have it)

    Mix everything together in a bowl and form 4 burgers.  I brown them in a grill pan on the stove and then finish them in the oven for about 15 minutes.

    Tzatsiki Sauce:
    1 cup plain greek yogurt
    1/2 medium onion, finely chopped
    1/2 cucumber shredded
    1/2 tablespoon minced garlic
    1 1/2 teaspoon lemon juice

    Combine all the above ingredients. Refrigerate until ready to use.

    I use whole wheat pita pockets, instead of buns. Put the burger, a piece of lettuce and some tzatsiki sauce in the pita and enjoy!  If you want to add cheese, feta is great.

    I made this over the weekend and put it over chicken.....salad on the side <img src="http://cdn.cl9.vanillaforums.com/downloaded/ver1.0/content/scripts/tinymce/plugins/emotions/images/smiley-tongue-out.gif" border="0" alt="Tongue out" title="Tongue out" />.. it was soooooo good.  I couldn't stop eating it!!!!
