help with Ukrainian Catholic traditions?

My fiance was raised Ukrainian Catholic so he is hoping we can include some traditions in our Unitarian ceremony. Any Ukrainian Catholic brides out there? We are also looking for a poem or reading to include. Thanks for your help!
