  I would say sit down with your fiance and pick the readings together.  Pick readins each of you find significant.  At least to me, this would mean you have picked readings that are significant to both faiths.

  get these books: "together for life" which is a guide to catholic ceremonies outside of Mass (i got a copy from my priest and many churches have them in their gift shops) and "celebrating interfaith marriages" by Rabbi Devon Lerner (i ordered online from Amazon). Both have a great selection of readings used often in Catholic/Jewish weddings.
