Your opinion needed- BBQ catering

So I'm a slacker and haven't booked our caterer yet... Embarassed

But I'm finally about ready to start asking for quotes.

Please judge my "choices," and pick the 2nd meat option (out of 3 potentials).  I only eat seafood for meat, so salmon is a given, but I want to have some veggie-friendly options for sides, etc.  The food is simple, but all FI and I want is some hearty BBQ food.

Hor d'oeuvres (2)
Black Bean Dip
Fruit Platter

Salad (1)
Spinach salad with raspberry vinaigrette

Meat (2)
Salmon

and one of these three:
St. Louis Styled Ribs
Pulled Pork
Pulled Chicken

The sauce is served on the side, to lessen potential messes

Sides (2)
Baked Potato
Corn Bread Muffins

Am I missing something?

    I would choose the Pulled Chicken, but that's only because I don't eat ribs and don't prefer to eat pork. But I would totally have the Salmon! So I'm glad you're sticking with that!

    I don't think you're missing anything. That sounds like a really filling meal... I love BBQ :o)

    Do you have vegetarian guests? As a vegitarian I look at your menu and see that I'd be eating salad (a small portion, appetizer salad, likely with no protien in it), cornbread and a potato. That's a very carb-heavy not so interesting meal.  Can your caterer do a veggie entree (grill some tofu perhaps?)

    We do have a couple of vegetarians, and I'm going to ask if there is any type of veggie entree option.  One is FSIL, but she LOVES (like totally obsessed) with baked potatoes, so she'll be covered.

    But it is a MAJOR minority, so they may be out of luck.  Which sucks, I know, since I only eat seafood (no poultry, red meat, etc), and I tend to get the short end of the stick at weddings.  It's unfortunate, but FI and I have our hearts set on BBQ and are total carb-addicts.
