Recipe and cooking issues

H and I have had many recipe adventures in the last several months since marriage.  A few have been quite good, but many of them suck.  Are we bad recipe choosers?  Are we bad cooks?  How do you fix something like this?  Cooking classes?  I need ideas.

  • First of all you should figure out what ingredients you really like and work from there. Like, I hate cumin so I stay away from anything with even the slightest amount, as I know I will hate it. Or, anything with cheese I always add more than the recipe calls for, as we both love the taste of extra cheese.

    If you are struggling to cook, I would suggest Taste of Home's 5-ingredient cookbook. They have a lot of really awesome recipes with only 5 ingredients, so they're kind of impossible to screw up. Other than that, a lot of it is trial and error. I've cooked a lot of meals only to find that I should have added more of this, less of that.
  • I would suggest watching some of the shows on the food network.  Barefoot Contessa is a really good one....she explains a lot about the food and what works well together.  Unless you are rolling the dough, I wouldn't recommend trying her over the top recipes, she has to spend $750 at the grocery a week!  Another really good one to watch is Alton Brown, I can't remember the name of his show but that guy is amazing.  I think he might have a book or two out there.

  • I agree that you should watch Alton Brown's "Good Eats" just because that show is awesome.  I love Alton.

    And betrothed, I'm disgusted with most of the comments that you have posted. I don't think I've ever read such judgmental comments in my life. I'm so lucky that the girls I speak to on theknot are nothing like you...I would've never come on here for ADVICE if I would've encountered a big a bitch as you. I genuinely feel awful for your children or your future children, and I think it would be irresponsible of YOU not to invest in their future therapy sessions starting now. Because trust me when I tell you honey, they're gonna need it. ~jcaruncho2010

  • We have watched Good Eats.  Maybe we need to watch it and try some stuff out afterward.

  • I also suggest ALton Brown. his books and his shows. He explains the science of cooking and is very detailed in his descriptions of techniques and ingredients. His style appeals to my very logical mind, and the techniques and principles he explains can be applied to lots of different recipes to make your own creations come out that much better. He gives me the principles I use for improv cooking, because onece you understand the basics, then you can expand.

  • I really like him because he walks you through why he does things the way he does.  I've learned some excellent cooking techniques from him (I improved my rib making process by using some of his techniques and everyone clamors for them now).

  • If you have texture issues or if your meat (steak, poultry, pork) is coming out a little dry or you just want some good flavor look up recipes on how to brine. We did it last year for the turkey for Thanksgiving, now we're hooked.
  • I love to cook, but it can definitely be a trial and error process, especially when it comes to technique, which can really affect texture and flavor. It's hard to know what's going wrong though without any specific examples. For example, I've had a lot of friends struggle with cooking meat. Is there anything you guys cook a lot that consistently comes out poorly?
     
  • It's not really specific ingredients that we have issues with, just how things come together.  They just don't combine into awesome like my mom's cooking did.
