RSVP'S

So, I made a deadline date for the RSVP's for May 15, 2013. I am concerned with everyone getting theirs back to us, and we are trying to keep track of our head count. We already know we have to pay for 100 people, so we are just trying to keep track. What should we do for our final count? Because there may be some that do not send the RSVP but then show up! Opinions please!!!!

    I made it a month in advance because I have to tell my venue/cater 2 weeks before hand. I am a huge planner and I do not want to wait till the very last minute to be throwing a count together. I am not stressing it yet. It was just a thought and a concern.
