  Online proofing is when the proofs (the images typically with a watermark so you can't print them) are posted online. 

  Typically they have a link you can share with people to view the proofs. 

  Sometimes they can order prints from the online proof gallery. 

  You can often times have it password protected. 

  Sometimes you (or those you give the link/password to) can download the images, it depends on the rights that come with your package and the web site the photog uses.

  
  

  Basically it replaces the old printed proofs. If you get the rights to your photos it's not a big deal to have online proofing. It makes things easier if you want to share the gallery with others and not upload all your images to FB or a photo sharing site. It is also good if your package comes with an album bc you can typically mark your favorite photos so they can see which images you want in he album.
