Anywhere south of Puerto Rico is going to give you great weather in December.  :)

The entire Caribbean, with the exception of the Bahamas and possibly Turks and Caicos, will still be warm enough for a tropical HM. What types of things are you interested in doing? Do you prefer all inclusive? How long were you looking to be away for?

Cruise!  Very budget friendly (if you are careful), and you can see a variety of places in a short time.  Early December is bargain price time.  Over the Christmas holiday, prices go up.  Price includes most food, but not alcohol or soda.  You need money for shore excursions and tips.  Talk to a travel agent.

We would like to spend most of our time relaxing, but also love adventurous stuff as well....hiking, snorkeling, jeep tours etc. I am very torn between the idea of an all inclusive or not. I like the idea of being able to eat/drink whenever we want, but from my experience at all inclusives the drinks and food have been so so. Also, most of the islands with all inclusive we are not realy interested in (Jamaica, Mexico, Domincan). So far we have considered: St. Lucia, Barbados, Aruba or the US/British Virgin Islands. Any ideas?!

Many cruise ships have an anytime dining option, where you can eat when you want.  Norwegian and Princess both do this.  We usually sail on Princess, and always choose this option.  Food is very good.
