Recipe Thursday?

I'm trying to be HEALTHY and do my workouts. I made this for dinner and it was frigen outstanding- 

Veggie quesadillas- thinly slice lengthwise 1 large zucchini & 1 large summer squash, broil for about 10 min. Cut up 1 red pepper & slice 1 avocado. Load onto half a whole wheat tortilla (there are enough veggies for about 4 full quesadillas) and spread pesto on the other side. Sprinkle in a tiny bit of fat free mozzarella & fold over. Heat butter substitute in non stick skillet and cook 2 at a time for about 5 minutes on each side until crispy and melty.

    This is a yummy healthy cold weather recipe.

    Acorn Squash Soup

    2 acorn squash
    4 apples (yellow or red work best)
    2 onions
    1tbsp. Black peppercorns
    Salt to taste
    1tbsp. Cumin
    Olive oil
    (For spicier flavors you can add curry or chipotle powder)

    Slice acorn squash into wedges and toss in olive oil. Broil squash for 30 minutes. Flip squash and add apples and onions (sliced). Broil for 15-30 minutes (until desired texture and caramelization).

    Blend broiled veggies in a food processor until smooth. If you prefer heartier soups, you can chop up 1/4 of the veggies and add after blending the remaining mixture.

    Add spices and allow to simmer for 30 minutes (or for crockpot lovers, throw it in the crockpot on low).

    Its actually pretty good. I am not a squash person but I loved this recipe! FI sometimes adds a little cream to make for a richer flavor. Definitely my favorite squash recipe!
