Tell me about escort cards

I'm starting to think about how I'll write out escort cards. Would you do one card per couple? Is it okay to use "and guest" for truly single couples, or do I have to find out who they're bringing as a date? Our RSVP date will be 3 weeks before the wedding, and I can pretty much guarantee that some people won't know who their date is until the last minute.

I did 1 per couple.  The few people that are single and brought guests, included a name of their guest on their rsvp, so I used names on all of the, but had they just rsvped for 2 without at a name, I would have put guest on it.

I did one per person.  I knew the names of everyone attending my wedding but I have seen them written as "Guest of John Doe" at other weddings.

Already reported them using a different name.  They were commenting on every post over on Reception ideas and advertising their business with each post.
