Non-Religious Bride and Groom vs. Religious Parents?

My fiance and I have decided to have a friend marry us and not go through with the traditional church wedding. At first, my parents were okay with it. But then my mother made a comment recently telling me that not seeing me walk down the aisle in a church setting is what will be hardest for her.

My parents are Catholic and the HTB's parents attend the Church of England. And although they respect that we are not religious, the church thing seems to be very important to the family.

I know we need to do things based on us (the ones who are getting married) but has anyone had to go through this? What would be a suitable compromise? I wouldn't mind getting married inside a church setting but at the same time, I don't want to be hypocrytical. How does a non-denominational church work?
