Picking an officiant when not local and have no clue

A quick search on here for "meeting officiants" got me some great questions to ask potential officiants.

HOWEVER -

I really have no clue what content I want in the ceremony, and FI and I have never discussed it yet.  We will have this talk but we're still like 10-11 months away.  I think we need to book somene soon because of how few there are and how popular the location is.

How have you all gone about this process when you did not have anyone in mind (ie. childhood paster, family friend, etc)?

Do you need to have an idea of what you want in a ceremony before interviewing?

There are only 4 non-religious people that can officiate weddings.  I've done a little googling to try to see if I can learn anything about these people. One lady seems interesting but she is 72.  Seems very active in the community.

Do I :
call each officiant up?
ask if avaialble on my date for a wedding?
start my interview questions? 

We are going to our location in 2 weeks to scope out venues.  Not sure if I should to get all the research done so we can meet officiants in two weeks?  Since were only there two days with other tasks on hand, I don't think we'll have time to meet and greet and interview each person.  Kind of wanted to do that over the phone.
