Recipe Request

Hey ladies...

Looking for new recipes to try out on FI. We've been playing with some new ones this week, and thus far, we're loving them, but I just don't have the time or energy to go search out some new ones.

So, please, any recipes you have to share, spill em! I don't care what they're for (dinner, dessert, bread, drinks, whatev) and the only restrictions are:

- No tomato (no killing Oceana, please)
- My taste in fish is pretty much limited to salmon (but will eat any kind of shellfish)

    Rustic Goat Cheese Tart

    Okay, so it *technically* calls for tomatoes... BUT you can definitely substitute any old vegetables you like instead.  The combo of crust, cheese, and veggeis is delicious.  Also, I use egg whites instead of real eggs and use 1/3 less fat cream cheese.

    I lurves me some Chicken Kabob's! This is the receipe I usually use.

    I think I got this from the Heart and Stroke Website (...?) but I'm not sure.  Anyways, it works for asparagus, sweet peppers and zucinni.  Haven't tried it on anything else yet...

    asparagus stalks, trimmed

    1 tbs olive oil

    1 tbs  lemon juice

    a pinch (maybe like 1/6 or an 1/8 of a tsp) ground cumin

    1/4 grated lemon rind

    a pinch black pepper & salt to taste

    Spread it over your veggies then broil them for about 10 mins (on the highest rack) in your oven.  They're yummy!!

    Sorry I can only make Italian food and most of them require tomato Undecided

    This is good though:

    Parmesan chicken- You just make a mixture of 1/4 parmesan cheese (bonus if it's freshly grated, but the Kraft kind is fine) and 3/4 Italian style bread crumbs.   Dip the chicken in plain yogurt (or  soak in buttermilk if you're into that), sprinkle with flour, and cover with the cheese/bread crumb mix.  Then bake.

    I usually make that with sweet potato French fries.  You just slice them, put them on a baking sheet, and brush olive oil over them.  They take a little longer to bake- maybe 45 minutes at 350?  But if you like sweet potatoes they're fantastic.

    Ana I had sweet tater fries for dinner last night, I put paprika and cinnamon on  them too.

    So this is going to sound gross, but have you had wet burritos?

    Here are a few of my favorites:


    Mocha Punch
    - 2 1/2 qt water
    - 1/2 C Nestle quick powder
    - 1/2 C sugar
    - 1/4 C instant coffee
    - 1/2 gallon vanilla ice cream

    Boil water. Remove from heat. Add nestle, coffee and sugar. Stir until dissolved. Refrigerate for 4 hours. Serve over ice cream. (This is great for brunches or bridal showers)



    Mushroom Rice (good side dish)
    1 can beef consume soup
    1 can french onion soup
    1 stick butter
    Mushrooms (1 small can plus juice)
    1 cup rice

    Grease pan and throw it all in together. Bake at 350 for 1 hour. Stir occasionally.




    Double Choc. Brownies (From Martha Stewart's favorite recipes) - These taste the BEST after they have sat for 1 day)

    1 stick butter
    6 oz bittersweet chocolate
    1 1/2 C sugar
    3 eggs
    1/2 C cocoa
    1/2 tsp salt
    1/2 C flour

    Melt butter and chocolate in double boiler. Whisk.
    Remove from heat, whisk in sugar.
    Whisk in 2 egg at a time.
    Whisk in cocoa and salt.
    Fold in flour.

    Bake at 350 for 35 min in 8x8 pan

    Oh, and I meant to say that I actually like the goat cheese tart better if you use feta... Next time I make it, I want to use basil and oregano feta... MMMmmm.

    Creamy Baked Chicken

    4-6 bonless skinless chicken breasts
    8-12 slikes baby swiss cheese
    1 Can Cream of Chicken Soup
    1/2 can of water or white wine
    Bread crumbs
    stick of butter  melted
    9X13 Pan

    Preheat oven @ 350 degrees F

    place the chicken breasts in pan
    Lay Slices of Baby Swiss over all breasts (okay if overlapping)
    Mix Cream of Chicken soup and Water(or White wine) together; pour mixture over breasts
    Cover with bread crumbs.
    Drizzle with butter before placing in oven

    Cook for 45 minutes or until done
    serve with Cashew Rice

    Cashew Rice

    2 cups long grain white rice (NOT INSTANT)
    2 cans Beef Consume
    1 Can Mushroom pieces (drianed)
    1 small onion diced
    1 Green Pepper diced
    Butter
    Cashews (optional)

    In a 9X9 pan place rice and beef consume
    In a skillet melt butter and saute onions and peppers until soft.
    pour on top of rice
    Add mushrooms

    Cover and bake for 30 minutes or until mostly dry

    Add Cashews ontop bake for an additional 5-10 minutes.

    This is a fav. easy/quick dinner of ours, and even the pickiest eaters seem to love it!  We do half a recipe and I do use boneless, skinless breasts most of the time (or at least remove the skin before eating)

    Artichoke Chicken

    -2-3 lbs Chicken Parts, bone-in
    -12-18 oz Marinated Artichoke Hearts, drained and quartered (amount=depending on how much you adore artichoke)
    -2 Tbs Olive Oil
    -2 small Sweet Onions/ Yellow Onions, cut into bit-sized pieces
    -4 cloves Garlic, minced
    -salt, pepper
    - ~1 Tbs flour mixed with ~1 Tbs softened butter
    -1 C chicken stock
    -Parmesan, for serving


    Preheat oven to 450

    In a large baking dish or Dutch oven, toss the chicken, artichokes, onions, and garlic together with the olive oil and a pinch of salt (~ 1 tsp) and a crack or three of pepper.

    Bake for 15 minutes, then flip the chicken and bake another 10-15 minutes, until chicken is cooked through (about 165 F on a meat thermometer). You will be surprised at the amount of pan juices!

    Optional Sauce: After removing chicken, etc, place pan on a burner over medium-high heat. Whisk in the flour/butter paste. Once smooth, add the chicken stock and whisk until thickened, about 3 minutes.

    Serve chicken with crusty bread or rice, and sauce or pan juices. Can sprinkle on some Parmesan, but we didn’t end up using any!

    *French-cut chicken =2 legs, 2 thighs, and 4 breast pieces. Instead of removing the wings, cut each breast in half between the ribs on either side of the wing, creating two equal pieces- one with the wing attached and one without a wing.

    I made these for the first time last night and they were fan-freakin-tastic... and also, really easy.  I made a big batch, and will have them for dinner again tonight.  I topped them with all sorts of crazy stuff, like cheese, avacado, tomato (sorry), lettuce, sour cream and salsa

    MEXICAN BEAN BURGERS

    Ingredients

    • 1 carrot, sliced
    • 1 (15 ounce) can kidney beans
    • 1/2 cup chopped green bell pepper
    • 1/2 cup chopped onion
    • 2 cups salsa
    • 1 cup dried bread crumbs
    • 1/2 cup whole wheat flour
    • 1/2 teaspoon ground black pepper
    • salt to taste
    • 1 pinch chili powder

    Directions

    1. Place carrot into a bowl, and fill with about 1/4 inch of water. Cover with plastic wrap, and cook in the microwave for 2 minutes, or until soft. Drain.
    2. Mash beans and steamed carrot in a large bowl. Mix in green pepper, onion, salsa, bread crumbs, and whole wheat flour. Season with salt, black pepper, and chili powder. Add flour to create a firmer mixture, or more salsa if the mixture is too stiff. Form mixture into 8 patties, and place on a greased baking sheet.
    3. Heat a large skillet over medium-high heat, and coat with cooking spray. Fry the patties for about 8 minutes on each side, or until browned and firm

    Oh Mutley, I am all over that peach crunch cake...it looks soooooooooo good, and I don't even like peaches all that much.

    Canned apples were on sale at Target yesterday, so I brought some home and whipped up an apple pie cheesecake. Complete experiment, so we'll see how it tastes with dinner tonight.

    I changed it up a bit by using some pineapples once.  I love, love, love pineapples.  I think you could use any sort of canned fruit. 

    And seriously, that shrimp recipe is so quick and easy.  The owner of Weelicious is one of my good grad school's friend's SIL.  (Follow that?)  I know her site seems all about kids and for the most part it is.  However, all of her recipes are quick, simple and super healthy.
