Taco Meat...What to do with it?

As you might remember- Andrew and I had a fun date night where we made tacos and played "Ticket to Ride." (I've now beaten him twice and he's threatening not to play if he never wins. LOL).

So now we have all this yummy taco meat left. How can I cook it up into something different tonight?

    Is it already seasoned with taco spices?

    You can make taco dip! Mix it up with some sour cream, lettuce, and tomato and use tortilla chips for dipping.

    I ALWAYS make taco salad.  I.e. I just make a regular salad (lettuce, tomato, etc.) and put taco meat on it (and sometimes tortilla chips) and ranch dressing (I doubt the ranch dressing is NORMAL in this situation, but it's what I use.)
    I guess, to tell you the truth, I've never had much of a desire to grow facial hair. I think I've managed to play quarterback just fine without a mustache. - Peyton

    I do a layered taco salad.  Lettuce on the bottom, then crushed tortilla chips, the meat (warmed), cheese, guacamole, sour cream, and salsa.  It doesn't need any dressing.  :)  You can also add black beans and corn.  YUM!

    You could also make quesadillas with it or chili.

    Nachos, Burritos, any Mexican food is an easy one. But, to make something a little different you could try a taco pizza. Its just a little taco sauce lightly spread them cheese and taco meat bake as you normally would then when you pull it out add lettuce, tomato and crushed tortilla chips on top. Serve with a little sour cream.

    Taco salad, nacho dip, those are both good suggestions. I would probably make chili or spaghetti with meat sauce. I like the added kick the taco spices add to both of those things.

    Make some Velveeta shells and cheese and mix it in.  Nommy.

    You could also take some plain tomato sauce, mix the taco meat in, put whatever other spices you want and use it for pasta.

    People seem to really dig this taco meat pasta thing...I'm going to have to investigate this further. :)

    Meixcan Lasagna-cover the bottom of a dish with taco sauce, then layer cooked lasagna noodles, refried beans, mexican-blend cheese, salsa, and taco meat. Cover with cheese, bake at 350 for about 30-40 min. I serve it with sour cream on top, and usually spanish rice on the side.
