To start us off

I don't have a healthy recipe to share with you but SHE (<-clicky) does.  I love her books, and recipes!  Hope this helps y'all, I know I'll be checking her website a lot and using her recipes from her book. 

What healthy recipes do y'all have that you enjoy?  I am really hoping to start in with eating right as well.  I am so not a lover of veggies, especially green ones.  I am going to make myself experiment and try new things though.

    Pomodoro from allrecipes.
    Changes:  add a can of diced tomatoes, use olive oil and vinegar to taste, plus add some Red Wine Vinegar; sometimes I'll add sliced mushrooms and/or chicken or shrimp.

    Minestrone from foodnetwork and eatlikeme.
    Changes:  i do not use pancetta (make it vegetarian); i follow the eatlikeme steps for it... you can find them here.

    Meat and veggie kabobs:  Chicken/shrimp/beef, red onion, green pepper, mushroom, pineapple on a stick...  cook on the grill, serve with rice/quinoa/couscous.

    Haha love it!  I forgot we can do weight loss tickers.  This will also hold me accountable.  I'll find one and put it up.

    I'm on some crazy diet now that is uber restrictive, thanks to BF being an exercise freak (and since he's cooking, I might as well go along with it). 

    Anyway, the best thing he's made so far is incredibly healthy and incredibly tasty!

    Apple, Carrot, and Raisin Salad (wayyyy tastier than it sounds! It's practically a dessert!)


    And my favorite recipes:

    Salsa

    3-4 tomatoes
    Red bell pepper
    1/2 yellow onion
    Handful of cilantro
    Salt & Pepper to taste

    Throw in a food processor or blender.  Pulse until diced.  Enjoy with baked tortilla chips, or for extra healthy, on bell pepper slices or carrot sticks.

    Guacamole

    2 ripe avocados
    1/2 yellow onion
    Garlic powder, salt & pepper to taste
    Handful of cilantro
    Jalapeno pepper (to taste)

    Throw in a food processor or blender.  Pulse until diced.  Enjoy with baked tortilla chips, or for extra healthy, on bell pepper slices or carrot sticks.

    Gazpacho

    3-4 tomatoes
    1 cucumber
    1 green bell pepper
    1 jalapeno pepper
    4 tablespoons apple cider or red wine vinegar
    1 tablespoon olive oil
    2 cloves of garlic
    Salt & Pepper to taste

    Throw in a blender or food processor.  Blend until creamy.  If you like chunky, throw an extra cucumber and/or bell pepper in and pulse.  Let sit in the fridge for 8 hours to fully blend the flavors.  Serve cold as a soup.

    I am a huge fan of Tosca Reno and her clean eating ways.

    For lunch we had a split pea and root vegetable soup. Basically, chicken stock, split peas, leeks, carrots, parsnips, marjoram, parsley, bay leaves and thyme. Super yummy.

    This morning we had her baked oatmeal with apples, cranberries and cinnamon.

    With the amount of weight I need to lose I think a weight loss ticker would depress the life out of me!

    Yay for others looking to shed a few pounds this year! I lost a whopping 35 pounds last year, but gained some of that back after surgeries and the holidays. I've made a ticker and have already started my diet TODAY! Can't wait to get back to my goal weight...and hopefully most of the way there (if not all the way!) before my next vacation in May!

    I think you should make a ticker Lyz - we're all friends here and it's motivating!

    I'm with Allusive Lyz.  You should make a ticker, it's very motivating.  Noone is here to judge.  If anyone says anything I'll anus punch them.

    This is courtesy of my old roommate...sorry this isn't an exact recipe (the quoted part is taken from a FB message, I followed it like he said and it turned out great)

    Turkey Meatloaf:
    "Ok so there really isn't a set recipe that I follow. I usually throw whatever is around into it.

    I use ground turkey meat but ground beef works just the same. First break the meat up in a bowl.

    Add spices like garlic powder, pepper, lightly salt, chili powder and add onion soup mix and/or vegetable soup mix.

    Add a half to a full cup of oatmeal or breadcrumbs and one egg.

    Add a scoop of sour cream, minced onions, diced carrots to the mix. You can also add salsa or tomato sauce in place of sour cream. If its too wet just add more breadcrumbs/oatmeal.

    Place into a baking dish and cook at 400 for 50-60 minutes. I always start checking it around 50 minutes so it wont burn. Depending on the size, you may need to cook it longer.

    I usually use one large package of meat for this but if you want lots of leftovers use two. All ingredients are in ratio to the amount of meat you use.

    I think thats all of it from i can recall. You can always play around with it and add stuff. I tried BBQ sauce once instead of sour cream and that was really good. "

    This isn't a recipe, but for those girls who like protein shakes, I highly recommend Mix1 shakes.  You can find them at Vitamin World, GNC, etc., or at almost any grocery store in either the drink aisle, the diet aisle, or the organic foods section.

    They range from 90 to 210 calories, come in a variety of fruity flavors, and are delicious.  They usually serve as my breakfasts and post-workout drinks.

    i used to LOVE hungry girl, but eventually i quit using any of her recipes.  she mostly shops and uses processed food to cut calories which is BAD.  instead, i use real butter, sugar, eggs, etc. and more fresh fruit and veggies with whole grains.  i feel better and i get full and i'm actually satisfied when i do eat something... unless i'm having sugar cravings.  :)  but to each their own...  all that processed food made me feel crappy, so beware!

    I found this on SparksPeople last week and I thought it sounded delicious (but I love Tilapia). I'll probably make it without the mayo thought, just because I HATE mayo.

    Ingredients 1/4 cup Parmesan cheese 2 tablespoons butter, softened 1 tablespoon and 1-1/2 teaspoons mayonnaise 1 tablespoon fresh lemon juice 1/8 teaspoon dried basil 1/8 teaspoon ground black pepper 1/8 teaspoon onion powder 1/8 teaspoon celery salt 1 pound tilapia fillets  Nutritional Info 
    Fat: 10.3g
    Carbohydrates: 1.8g
    Calories:177.2
    Protein: 18.7g
     
    Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.  In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.  Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.  Makes 4 servings.

    I made mushroom fajita last night that were a hit. I just had whats in the recipe but I did make up some chicken that other people added to it and loved.

    Its better if you use fresh ingredients even though the recipe says frozen. I also think it over estimates how much mushrooms you need but really you can use as many or as few as you want.

    I think a ticker is great motivator because you can see how far you've come and how much further you need to go. Also, for some reason once I made mine it felt like a smaller number. I don't know why, maybe its just because I have a visual goal of get the ticker from point A to point B.

    Hmm, thanks for the heads up. I only clicked around a little bit, and they seemed fairly healthy. Of course, I did only look at about five of recipes. I guess I'll just have to be a little discerning in the ones I choose.

    I  love hungry girl!  I get her emails and have found some yummy recipes.  Actually I plan on making her Devil-icious Shrimp tonight.  Even the BF likes her recipes.

    Lyz - you could do a ticker for like 10 lbs, then I'm sure when you lose the weight you'll want to show how far you came!  Sometimes I get overwhelmed with the 50 lbs, I focus on 10 lbs or like getting into the 170s...

    my brother has a BMI of 51.  he finally decided he wanted to lose weight.  i tol d him for every pound he lost by a certain day (my wedding) i would give him a dollar.  my FI told me that he would match it.  but we had to know how much he weighed starting out...  he wouldn't tell me for a few days, and finally he told me he didn't know how much he weighed because the scale at the house wouldn't go that high.  ouch.  anyway, we're estimating it at 325 (although it might be low) and going from there.  but he wouldn't start a lifestyle change for the longest time because he didn't want anyone knowing just how bad it was.  so i totally understand not wanting to post it to the public, but if it's what is standing in between you and you actually making the change, don't let it!  :) 

    or just start out with a smaller goal, and then once you reach that try a new goal...  right now my brother wants to get down to where he can weigh himself on a normal scale.  that's his first goal.  and his second goal is a certain weight by july.  it seems like a lot, but i'm so glad he's finally taking control of it.  if you really want to do it then i know we would all love to encourage you!

    Ok, here's my 'go-to' meal - Parmesan Dijon Chicken:
    Mix melted butter (or margarine) with mustard in a large bowl. About 40% butter to 60% mustard (sorry, don't have the exact measurements on me, but you really can't screw it up). I don't really like mustard, but you only get a hint of it when it's all done and it's really quite good.

    Mix parmesan cheese and bread crumbs (our new favorite is panko bread crumbs) - about 50/50 on this one - in a large ziplock bag.

    Coat chicken with butter/mustard mixture, then toss in bag until fully coated. Repeat. Place coated chicken breasts in glass baking dish and cook as normal. I can't really tell you a temp/time because our oven is notoriously terrible and I have to cook things 20 mins longer than advertisied.

    Anyway, it's delicious and (fairly) healthy!
