Not Engaged Yet

For dinner tonight...

I just made a delicious dinner from pinterest recipes . . . BF said it was the best one in months.  I've made some pretty good things lately so this one much really stand out!!  Anyway, so I made brown sugar chicken (<---clicky!), sweet potatoes in applesauce (<----clicky again!), and then my standadrd salad of 50/50 mix, feta, tomatoes, avodado and red onion with yummy dressing. 

Anyway, so some details on the recipes if you decide to make them:
The brown sugar chicken . . . I DID end up making the sauce at the end.  It's really just the marinade, cooked down.  I added corn starch to it while it simmered to thicken in.  Also, BF said the sauce was the best part & has requested it on pork.  So I guess that's next!!
The sweet potatoes in applesauce . . . they didn't look anything like they look in that picture.  Canned yams/sweet potatoes are all chunky, not in nice little slice like that.  Just drain, dump them in the 1 quart container and put everything else on top.  I stirred them when they had about 5 minutes left to spread all the butter & brown sugar goodness around. 
And for both - I cooked few minutes longer than 30-35.  The chicken called for 350, the sweet potatoes 375 to I split the different t 365-ish and just checked the chicken breasts for doneness with a meat thermometer. 

Anyway, really easy dinner and really, REALLY good!!

    That looks delicious! I'll have to try those some time. I haven't had time to cook much of anything lately with all the overtime I've been doing. I can't wait to get back into it!

    Yeah, I'm not home too much these days and haven't really had the time to cook.  I've really been trying to find things to cook that are easy and super flavorful.  BTW, the chicken recipe is easily doubled - just use four chicken breasts instead of two and the same measurements for the sauce.  We had plenty of extra marinade/sauce, even once cooked down.

    Thanks for the tip! I'll keep it in mind. Short and simple is a great way to cook if you can find a good recipe, so I love when I find one here that gets a good review!

    That brown sugar chicken looks delicious!! Thanks for the links to the recipes... I might just give them a try one of these days.... ;)
