Please share your favorite squash and eggplant recipes.

I went to a farmers market today and purchased eggplant, acorn, butternut and sweet mama squash. I love squash but never seem to be able to make it how I like it.

(Cate I do have your eggplant parmesan recipe from a month or so ago.)

So I am looking for recipes you use these items for. Thanks!

    I normally can't stand eggplant but this dish actually has me going back for seconds. It's kind of a grilled version of ratatouille.

    1 eggplant, sliced
    1 zucchini, sliced
    1 red bell pepper, sliced into strips,
    1 medium onion, sliced
    3 T. olive oil
    3 garlic cloves
    3 tsp. balsamic vinegar (I think I used more than this)
    2/3 c. crumbled feta cheese
    2 T. fresh basil, slivered

    Preheat broiler. Place eggplant, zucchini, bell pepper, and onion on a baking sheet.  Drizzle with oil and sprinkle with salt and pepper; turn to coat. Broil veggies until tinged brown, turning frequently. Transfer veggies to a bowl, add vinegar, garlic, cheese, basil, and toss to combine.

    FI and I have yellow squash all the time with dinner, but I do it just very plain bare bones.  Cut into slices, boil, then butter and salt.  It's so simple, yet it's funny that I've had so many people ask for my 'recipe'...

    Sometimes when I'm feeling Martha Stewarty I make baked zucchini.  Cut into slices, dip in egg, then dip in Italian seasoned bread crumbs/parmesan cheese mix.  Put on baking sheet and bake at 350 for 10 min.  It's good and healthy and I'm sure you can substitute zucchini for any squash-like veggie.

    I made this once - it is a butternut squash lasagna recipe from Giada on Food Network. Pretty tastey, a little time intensive. That is my only real experience with squash.     I also make eggplant parmesan.  A little pasta sauce on the bottom of a pan, then a layer of 'easy bake' lasagna noodles.  Then more sauce, then slices of eggplant, then ricotta cheese (mix it before with one egg and italian seasoning and parmesean cheese).  Then another layer of noodles, then sauce, slices of eggplant, and more ricotta cheese, then another layer of noodles.  Top with sauce and then mozzerella.  Bake at 450 degrees for 45 minutes with in foil over it - with 10 minutes left, take the tin foil off to let the cheese brown a bit.

    Mmmm, mookow, this sounds so good! I'm totally stealing this. Feta cheese is my new obsession.

    I love this thread... cuz I absolutely loveeeeee eggplant and zucchini!! :D

    Here's a really easy one... Slice Yellow squash, zucchini, garlic and onions... saute in a little olive oil... stir in stewed tomatoes... add italian seasonings... and just let it simmer until the squash is soft.... MMMMM my favorite!!
