What's everybody eating this week?  I'm going grocery shopping in a little while and need some inspiration.

    Ugh I'm hoping some sorta take out. I'm still at work and probably won't be home til 7 cause FI is at a conference this week and I get to commute with him. Good times.

    IRL its this:
    -boca burgahs
    -fried egg and potato hash dish from a cookbook
    -dinnah at my ma's
    -and homemade pizza-toppings TBD.

    Not too inspiring, but I wanted to participate. :D

    Tonight I am having chicken and veggie soup.

    I'm not really sure about the rest of the week, but here's a rough outline:

    Tuesday:
    Pan seared tilapia with lemon and parsley
    Roasted Brussels sprouts

    Wednesday:
    Beef and veggie stew

    Thursday:
    Seared jumbo sea scallops with lemon pepper seasoning
    Roasted asparagus

    Friday:
    Leftover beef stew

    Tonight it's left over turkey noodle soup.

    I'm hoping to do a marinated pork tenderloin (I use balsamic vinaigrette dressing) with broccoli and maple-glazed carrots tomorrow night.

    Wednesday we're going out for wings.

    Thursday will be chicken. I'll probably make BBQ sauce and BF will BBQ it. We'll be eating more broccoli (I got a monster head of it for $0.99), probably potatos, and either salad or veggie sticks.

    And Friday will probably be a pasta night. Type TBD.

    Sorry I have no recipes. I'm not really a recipe following type of girl. I prefer to mix a bunch of ingredients together in a hap-hazard style and see what happens. I blame my mother. I've never seen her use a recipe to cook from (baking is another story).

    We're being lazy tonight & just ordered Italian.  I got the best thing I could think to get (penne with marinara) & I'm going to measure it out.  I also got a small salad to help fill me up before I dig into my pasta!  I started my Monday right & I'm going to finish it right too!

    This is good stuff, guys.  So far I've got:

    Tonight:
    Tilapia, mashed cauliflower, texas toast

    Tuesday:
    $5 gyro night at a local greek place

    Wednesday:
    Oven-bbq ribs, asparagus, mac and cheese

    Thursday:
    Spaghetti and turkey meatballs

    We'll probably go out Friday and survive the weekend on leftovers.

    I love how you all plan out your meals. I really need to start that.

    I just had an early dinner/late lunch. It was a delicious Tofurky Sandwich in a bulkie roll with Sabra hummus, and a small salad with lettuce, cucumbers, carrots, kidney beans, pita bread, and MORE HUMMUS!

    I have no clue of what I'll eat the following days though :(

    Tonight - salad, I bought a big thing of mixed greens and need to start using it

    Tuesday- Pasta, salad, and possibly garlic bread if I'm feeling ambitious

    Wednesday- Butter Chicken with rice and some type of vegetable

    Thursday- Pork Tenderloin cooked with mushroom soup, broccoli, mushrooms, celery and served over pasta or rice

    Friday- We might do a home made sushi night

    Saturday- Having friends over for Turkey, mashed potatoes, broccoli/cauliflower, brussle sprouts, squash, stuffing, and homemade pumpkin pie!

    Sunday will be left overs!

    mmm...

    tonight we're having SkinnyTaste arroz con pollo.
    Tuesday:  SkinnyTaste stuffed jumbo shells with marinara
    Wednesday:  SkinnyTaste enchiladas, CookingLight spanish rice, frijoles rancheros
    Thursday:  maybe going out to a local Mediterranean place!
    Friday:  not sure yet...  something fast as we have a special event at our church

    Posts like this make me really want my own place SOOO badly.

    Tonight it was salmon, pasta and baked apples.  I got home late and had to fend for myself. :(
