Not Engaged Yet

On the way to Paleo success!

I had a big success this week, I LOST 7 LBS! I don't expect to lose this much every week, but I am happy to already see a big move in the right direction. I have found a lot of great alternatives to foods I can't have, and honestly haven't missed the grains/legumes/sugars too much so far. I did take a cheat day Wednesday, but I wasn't too bad and splurged on Subway (yay for bread!) and a chocolate chip cookie. Overall I am happy with my success!

I am planning to continue and have my meals planned for this week. I also added a ticker to my siggy so that you all can hold me accountable. Feel free to nag me if you don't see it movin! Seriously, I want this life change to stick!!!

Anyone else tried Paleo since our original discussion? Cate & NurseyK, want to update us on how you're doing with it?

    Congrats! Hooray! For some reason- I really want to see a dinosaur in your ticker. Is that odd? LOL

    haha. Because of my previous siggy pic? Apparently I was scaring other NEY's on here....so I have up my dinos.

    I think it's because paleo makes me think cavemen, which reminds me of dinosaurs. But I doubt LilySlim has a dino object. LOL.

    I was a paleo slacker this weekend since I was moping that FI left.  But today, so far so good!  To me, it's more just the norm at this point rather than a challenge.  I don't chastise myself when I have food that doesn't fit the guidelines, I just take that as a cheat meal and move on.

    Yeah, I like the cheat meal concept. At first I was like "i'm gonna try without the cheat days". Now (<em>a whole week later</em>), I feel like the cheat days are healthy. It's all about learning discipline and not letting cheat days become every day.

    Paleo for me has been hard lately... well, at least my excuses make me think it's been hard (Easter, Mother's Day, week in Phx, Period Week). Because of my excuses I've let myself fall off of the diet... thus the scale hasn't budged down in a month. :( If anything... I gained 1.5lbs back.

    It's work that kills me, I'm usually pretty good on my days off. I've kept off 8lbs, which is decent, but I need to put more effort into not snacking on crap at work (cookies, candies, crackers, fro yo, etc). 

    However, interestingly, in the beginning of April I let myself eat a little bit of carbs (like ONE cracker at work a day) and the weight dropped significantly that week. My theory is that before (Jan - March) I wasn't eating enough so I lost weight, but I was starving my body. I'm having a tough time finding a happy medium. Taking it one meal at a time, this week is good so far. I'm not letting myself use excuses to cheat.

    haha. I know...it does take a lot of prep. I feel like I've spent the last two Sundays meal planning, shopping and making lunches. For now, it's worth it if I keep getting results. I'm sure it will get easier with time. I enjoy cooking though, so i'm sure that helps.

    FI and I made the food shopping and cooking into a joint activity, so it was enjoyable and something we did together.  It made it fun!  It's a lot less fun now that he's not here.

    Okay, 've had some pretty good paleo meals here and there, while trying to just cook more at home and spice up the variety of foods I eat, but I may have to go 100% on Paleo. 7lbs in a week is fantastic. That's like Biggest Loser style! Keep us updated and share any favorite recipes you have so far!

    My favorite is walnut crusted chicken breast.  If you are accepting of a little dairy, you can stuff it with blue cheese (or goat cheese), sundried tomatoes & spinach.  I'll add in that part, but if you want to skip it to go extra healthy, go for it.

    First take the chicken breast and place your non-knife palm on top of it.  Mid-way through the side of the chicken breast, cut a 1" hole and then slide the knife back and forth inside (without widening the hole) to create a pocket.  In a food processor (or just chop finely by hand), mix baby spinach and blue cheese (or goat cheese, if you prefer) and sundried tomatoes.  Add just a touch of olive oil, a healthy dose of pepper, and garlic powder.  Using your fingers, press the mixture into the inside of the chicken until it's full but not overflowing.

    Pre-heat oven to 375 degrees.  Take a baking sheet and cover in tin foil - coat lightly with olive oil and set aside.

    In a wide shallow dish, crack two eggs and whip lightly.  In a food processor or blender, mix a bunch of walnuts, thyme, pepper, garlic powder, and onion powder.  Pour it into a similar shallow dish.  Heat a wide deep pan with about 1/2" of canola oil in the bottom (nice and thick) over medium/medium-high heat.  Toss each chicken breast into the egg on both sides, then pat on the nut mixture, and place gently in the hot oil.  Fry for about 7 minutes on both sides.

    Place the chicken breasts on the baking sheet, place all in the oven.  Let them bake for 30 minutes.  Enjoy!

    Cate - that recipe sounds amazing! I'm so putting that on the menu for next week! I am doing some dairy, but i'm trying to keep it at 1-2x per week. mmm!
