Recipe Hunters!!

I am making pork chops for dinner (bone-in, about 1/2" thick) and I don't know what to do with them! I am completely brainfarting and can't concentrate plus I'm HUNGRY and recipe sites are doing nothing but hurting my brain and making me even hungrier.

So - share your favorite pork chop recipe OR go recipe hunting for me!!! I like simple and easy to follow recipes, and I'm not picky about ingredients except for fruit. I do not like fruit in my entrees.

    My absolute BEST pork chop recipe includes cranberries. Do cranberries fall under your no-fruit restriction? It's super easy and very few ingredients! (I don't even like cranberries and I like this! The Port makes it sweet, not too tart.)

    Pork Chops with Cranberry, Port and Rosemary Sauce
    • 4 1-inch-thick pork rib chops
    • 2 3/4 teaspoons minced fresh rosemary, divided
    • 2 tablespoons (1/4 stick) butter
    • 3/4 cup low-salt chicken broth
    • 3/4 cup tawny Port
    • 1 cup leftover cranberry sauce


    Sprinkle pork chops with salt, pepper, and 1 teaspoon rosemary. Melt butter in heavy large skillet over medium heat until beginning to brown. Add pork chops and cook until browned and cooked through, about 5 minutes per side. Transfer to platter; cover to keep warm. Add broth, Port, and remaining 1 3/4 teaspoons rosemary to same skillet and boil until liquid is slightly reduced, about 4 minutes. Add cranberry sauce; bring to boil, then reduce heat to medium and simmer until sauce is thickened, about 7 minutes. Season sauce with salt and pepper. Spoon sauce over pork chops and serve.

    ETA: I use canned "whole berry" cranberry sauce.

    Unfortunately, yes, it falls in the no-fruit restriction. Sorry! I just detest the taste of cooked fruit, hence I do not have any cranberry sauce or have the desire to go buy any. It does sound good though.

    I don't have any Port, but I have red wine. Would that work the same?

    Super duper easy pork chops:

    Preheat oven to 350.

    Liberally sprinkle both sides of the chops with salt, pepper, garlic powder, paprika, and (if you like 'spice' chilli powder). In an oven proof heavy skillet (cast iron is best) heat 2-3 TBLS of olive oil over med high heat. Sear each side of the chops for 3-4 min. Then stick in the oven. With the bone in, it could take at least 15 min,  use a meat thermometer to gage doneness. Once done, pull the chops, and use the pan drippings to make sauce/gravy.

    Hmm, that sounds nice, lennon! I don't have an oven-proof skillet, though. I'd probably have to transfer the chops from the pan into a casserole dish or baking sheet.

    FI wanted me to do my soy sauce honey glaze on the chops, so that's what I ended up doing (3 tbsp soy sauce, 6 cloves minced garlic, 1/4 cup honey whisked together; coat chops; bake @ 375 for 30mins). But a friend of my mom's suggested this recipe on FB and thought I would share:

    Marinate chops in apple juice (or cider) and bourbon (or Jack Daniels) for at least 3 hours. Season with peppercorns, salt, sugar and garlic. Grill (or broil) until no longer pink inside.

    I wish I had known about this one sooner or else I would have gone for it!
