post-Thanksgiving: what's for lunch/dinner?

hello ladies!

I am back from Thanksgiving with the ILs, and it feels wonderful to be back home and in my normal routine.  today is my first day back at work...  we used yesterday to put up Christmas decorations, do 57 loads of laundry, and clean the house.  it was nice to have an extra day off with H.  we ended the evening eating pan-popped popcorn and watching Cars 2.

sadly, we don't have any Thanksgiving leftovers to reuse so it's meal planning as normal for me.  I'm thinking about making a mini Thanksgiving dinner next Monday...  turkey!  yum.

for lunch today, I have some homemade veggie soup and an apple cobbler yogurt.  I don't like it, but I'm going to eat it because I'm hungry.  I thought it would be good, but I was wrong!  I have some grapes for later.  hopefully your lunches are more "inspired" than mine...

tonight, we're having SkinnyTaste porkchops and applesauce (in the crockpot!), a SkinnyTaste inspired fall pomegranate salad, and small baked potatoes.  I can't wait!

    Bummer no left overs!  We've got them for DAYS!  That's what I'm having for lunch anyways..turkey, green salad with basalmic vinegar, snacks are tuna and tomato and apple and natural peanut butter, dinner is steak, baked red potatoes and broccoli.  I think we still have some vanilla frozen yogurt left and I have FF caramel sauce calling my name!

    Hi CoCo!!  I really wish I liked porkchops. I hated them when I was little, maybe I like them now?  I should give it a try sometime.  I love that you make everything from SkinnyTaste by the way!! For the most part I do too! 

    For lunch I had a grilled chicken breast, 2/3 cup of yellow rice (yes I actually measured it as I was packing it up last night lol), and some roasted beets for lunch!  

    For dinner tonight we're having pasta

    For lunch, I actually remembered to bring something! I made a cold turkey salad for lunch. It's so easy to make:

    Leftover turkey meat
    1 green apple
    2-3 celery stalks

    Peel apple, cut in half, core and chop into small cubes. Chop celery stalks. Chop turkey, using mainly white meat. Add mayo as desired, mix and serve on a sandwich, or wrap or eat alone!

    I just put some in a small tupperware container and ate it for lunch. Yummy.

    As for dinner ... more leftovers! Probably turkey soup. FI and I made our own turkey stock using the turkey carcass and bones. Then we shredded turkey meat, added brown rice, peas, onions, cubed red potatoes and chopped celery. It's delish!!! I might bring some for lunch tomorrow.

    I have a few more turkey recipes up my sleeve for the rest of the week....

    rdr - I love ST because everything is always good.  sometimes I'll try a new recipe and hate it, but ST is consistently good and I never worry if the meal is going to suck.  I also use Cooking Light and Martha Stewart/Everyday Food/Real Simple, but I just love ST.  :)  also, I'm not a HUGE fan of pork chops but these sounded great!

    bside - that soup sounds AMAZING.  I love soup.  I really wish I had turkey leftovers for pot pie, enchiladas or quesadillas (or even baked flautas?), or soup. 

    ETA:  I threw out the yogurt after all.  it was nasty, like eating sour cream with cinnamon.  BLECH.

    Tuesdays are our gyro nights, since a local "Greek" restaurant offers $5 gyros Tuesdays, so that's what we'll be having tonight.

    We do have some leftovers though -- delicious ham and turkey, disgusting green bean casserole -- so we'll definitely be making several meals out of that for the rest of the week.  I'm going to make a soup with the turkey, I think...

    Lunch today was: Homemade chicken noodle soup - well... halfways lol. I used a rotisserie chicken from Meijer, carrots, onion, green beans and corn - and pre-made egg noodles....sooo yummy - they were leftovers from dinner last night. :)

    Snacks: Apple and grape snack pack (Meijer's sells prepackaged snack packs - they are awesome. ... A little on the pricy side, but I am way too d@mn lazy to cut up fruit and stuff), a snack pack of hummus, sunflower seeds and carrots and a 100 calorie rice crispie treat :)

    DInner: Crock pot roast beef :) I LOOOOOOVE this meal. It's my go-to in the winter. Carrots, potatoes, green beans, carrots, onion and roast beef. Mix an onion soup package with some worcestershire sauce and 1/4 cup of water, and pour over the mixture = Yumtastic.
    Sidenote: BF HATED crockpot meals when we started dating - I told him if he didn't like what I made, i would never use a crockpot again. I made above mentioned meal - he swore he'd shut up about it :)

    rdr - I will!  the only thing I haven't LOVED from ST was the brown rice and chicken sausage stuffing.  I liked it, but not enough to make it again.

    Elle - I love gyros!  when I went to Greece a few years ago, I tried them and I've been hooked ever since.  maybe I can talk H into eating at the Greek restaurant this weekend.  :)

    Irish - love crockpot meals!!  I'll definitely try this recipe... I've been looking for a good crockpot beef recipe.  do you cook it with all the veggies in there, or separately?  how long do you cook for?  high or low?

    Apple cobbler yogurt sounds like heaven. I had a bring salad for lunch but I'm excited to try a new Skinny Taste recipe. The Carne Guisada (Latin Beef Stew) from yesterdays post looks amazing, so I'm trying that. The weather has taken a major dip here and I've been craving soups/stews/and chili lately. Mmmmm.....

    Danie - I bookmarked that recipe to try soon.  let me know what you think!  I think my H would enjoy it, but we're a little burned out on Latin inspired foods for a couple weeks.  we had beans, tortillas, and pureed chiles/garlic for every meal while we were at his family's place.  even for breakfast!  so... I might try it in a couple weeks.

    I had a turkey sandwich for lunch and some soup. And an orange. For dinner, I'll probably have a quesadilla. Or I have a strange craving for tuna.

    Sadly we don't have leftovers since my mom hosted our T-giving dinner.

    Tonight we're making Panang curry with beef. Also trying to figure out something to do with our kale and turnips that we got in our CSA. Help?!

    Psh, you all eat so much better than I do! For lunch, mom wanted chinese, so I'll be having Jalapeno Cheese Wontons and Volcano Shrimp. This will probably be what I have for dinner as well.. ^_^;

    As for Thanksgiving left-overs, I only took home the raspberry jello (mom wanted the rest).. and that's what I had for breakfast. Yeah, something tells me my diet needs to change...

    Coco -- I made the pumpkin pie dip served with sliced apples for Thanksgiving & it wasn't a big hit.  I think that's the only thing that I've made that didn't really care for!

    You should totally do a mini Thanksgiving re-do! We did one on Saturday because we didn't get any leftovers either. It was a blast and we sure have been enjoying all the food since!! Last night I made turkey noodle soup and it is delish. We'll probably have leftovers again tonight. For some reason I don't seem to ever get tired of those foods.

    I'm really feeling a need to roast a turkey just for leftovers.  I saw a recipe for a cranberry sauce and turkey quesadilla.  YUM!!

    it does allusive!  I'm thinking that it needs some brie cheese in there too... but who doesn't have turkey leftovers?  THIS GIRL.

    All I have is left over chicken barley soup.  It turned out really good.  So hopefully reheated is just as good :)  I made it last night and it was really good.  It didn't take too long either which was really good.  It's nice and thick, perfect for a cold long day like it was yesterday.

    We've been eating Thanksgiving leftovers since Thursday, so even though we have some left still, We're so sick of them that I'm cooking some other stuff too this week.

    Tonight, we're having chicken pesto stuffed shells with garlic bread and salad. Tomorrow we're having a Greek quiche.

    Dessert will be leftover pies, because those never get old :)

    my mom has some leftover homemade German cheesecake.  maybe I can swing by and steal some of that...  not pie, but close.

    coco, I layer everything. Potatoes, onions, carrots, green beans and corn. For the green beans and corn I usually just use canned. Then put the meat on top and add a little more onion. Then pour the liquid on top. Cook on high for about 6 hrs. The best thing about my crockpot?? The "warm" setting. It keeps my food warm but doesn't dry it out :)

    Coco, I made the latin beef stew last night and it was good. Just what I wanted, something hearty and warm. Although I used all the latin spices it didn't taste extraordinarilly different to me than regular beef stew. In fact, we added a little hot sauce to our bowls to spice it up a bit. But it was easy to make, if a bit time consuming (for a non crock pot recipe). I'll keep it in my back pocket for cold nights and extra beef, but I'm not sure I'd go out of my way to make it again. But it was good and filling! Hope that helps!

    Danie - did you use real sazon?  I double her spices most of the time, and I probably would add very tiny chopped up jalapeno.  my H is hispanic, and he likes his food spicy.  I add the chopped jalapeno to her Arroz con Pollo and it made a big difference.  I think Gina is Colombian, and they don't tend to have spicy food.  my H is Mije & Mexican, so they are all about spicy!!  also, it would probably be better if tomatoes were in season.  ;)
