Not Engaged Yet

so, what's for lunch??

hey girls!

I'm just trying to pass the time until lunch (only 45 minutes left!)... today I brought some SkinnyTaste Santa Fe Crockpot Chicken and some blackberries. we're trying to clean out the fridge. we have so many random leftovers that need to be eaten!

also, for SkinnyTaste fans, I modified the Asian Glazed Drumsticks recipes to make it orange chicken, and emailed Gina to let her know. she said it sounded great, and she would try it out and make a post about it sometime soon. how cool is that?

I haven't decided what's for lunch yet. I have frozen dinners in the freezer here at work, as well as salad stuffs, but none of that sounds good. Mainly because it's cold and rainy and icky out and I just have no clue what to eat. :(

    Also, that is awesome!! :)

I'm officially on a serious diet-and-exercise regime. I've been having horrible fatigue (as in, working with a doctor to find out what's wrong fatigue) and as such, I've been eating crap food and not working out like I should. Not to mention two trips to Epcot Food & Wine Festival...oy.

I've been big on sandwiches as of late, so that's the plan for lunch. Turkey panini (5-grain thin-slice bread, roasted turkey, reduced fat colby jack, and reduced fat garlic herb mayo), apple, and bottled water.

...and Asian Glaze drumsticks sound AMAZING.

Leftover pasta with meat sauce. Not excited about it, but it's free and it will fill me up, so I'm going with that!

They just opened a Chipotle in our area... the closest one outside of that was an hr away. I haven't tried it yet, but everyone says it's better than Qdoba which is pretty okay in my book.

Definitely better than Qdoba. DH and I should own stock in Chipotle, we eat there at least once a week.

I'm thinking Noodles & Co. today. I had 2 adults and a 10-mo. old baby in my house all weekend, so I'm cutting myself a break on not getting a lunch packed this morning.

Good on you for clearing out your fridge! Leftovers always get thrown away here :(

I just made some whole wheat ziti and used some Ragu Veggie Pasta Sauce. I made a small salad and some garlic pita bread and I'm drinking apple cider! Lunch is one of my favorite times of the day :P

I love Chipotle! when H and I were in college and "just friends" Wink we would go to Chipotle every Friday! it's so much better than Qdoba, IMHO. mmmm... I'll have to see if he wants to go soon!

oceana - I love sandwiches. yours sounds great! sorry about the fatigue, hopefully you figure it all out soon. :)

I'm hungry and want lunch but I just had a cavity filled so I can't feel half of my face. Eating sounds like a dangerous undertaking o_o.

Hope - for the orange chicken, it's really similar except I let the sauce simmer for a while and then add the chicken and continue cooking.

I added a smidge more ginger than called for, and also added the zest of about half an orange.

the rest is just like her directions... and it was FABULOUS. the sauce was so good drizzled on roasted asparagus and some jasmine rice. YUM.
