Not Engaged Yet

What's for dinner?

I am making Mexican Slow Cooked Pork Carnitas(<--- clicky for recipe) with Cliantro Lime Rice (<--- clicky again) and black beans.

The pork has been in the crock pot for 2 hours and smells so delicious already.  It's making me hungry.  :)

  • mmm...That sounds wonderful SKP. I wish I was having THAT for dinner!

    I'm having chicken kabobs, green beans and 1/2 a baked sweet potato. It's not exciting, but it's on plan for me. I'm sooooo close to hitting my "20 lbs lost" mile marker this week, so I really want to stay on track.

  • Yum, that sounds delicious. I haven't even eaten lunch yet, so I'm going to go do that now (Lean Pocket, blah). Tonight I have a dinner event to attend, so I'll probably be having chicken or pasta (blah).

  • I'm having some (totally unhealthy) hash leftovers that we made last night- sweet Italian sausage, bell peppers, onions, potatoes, garlic, mushrooms. With some cheese on top.

    Im making boneless buffalo wings and curly fries, yup not too exciting here! I need to go grocery shopping.

     

  • Gyros!  We have gyros every Tuesday because the local Greek place does a special.  It's one of the highlights of my week.
  • I'm making skinny italian spinach meatballs this afternoon but I don't know if we'll have them for dinner.  (I am making a huge batch to add to our freezer stash.) 

    I'm thinking spicy chicken pad thai.  DH is hoping that he's eating hospital food for dinner.  Haha.  I told him that I wouldn't be surprised if this guy holds out until Friday or even next week.

  • I'm home alone tonight so teriyaki salmon, avocado, and carrot sandwich. All I really want is an ice cream sundae though, I've been wanting one for so long.

    Mutley - Spicy chicken pad thai sounds delish.  Maybe that spiciness will help the little guy move along! :)

    QN - I have never heard of carrots on a sandwich before.  Are they cooked or raw?

  • All the food sounds good.

    I have dance at 6pm and I don't get home from work until 530. So it will probably be a roast chicken sandwich with perhaps Wonton soup or raw veggies... :/ nothing special.

    SKP- The rice sounds amazing, have you made it before? hows the citrus flavor on it, strong or not? (i ask because BF love cilantro but hates citrus)

    You can taste the lime in it, but it's not overpowering.  You can make it without the lime, or take out half the rice before you add the lime for your BF.

  • pasta with some swiss chard pesto and some leftover meatloaf.  Very good stuff.

    I needed calories according to SparkPeople, so I had a baked potato with peas, a tofu dog and tomatillo salsa.

  • I had baked chicken, mashed potatoes, and even splurged on a brownie for desert. :)
