Crockpot Fun for NYC1210

I didn't want to thread jack the other post.  I've come to rely on my crockpot because I'm currently remodeling my WHOLE house and right now there is no kitchen, like literally we just put up walls in there.  So Danish Man and I have been living off a crock pot, rice cooker, toaster oven, microwave and electric griddle.  Since crock pots recipes are so easy to do and all I have to do is throw in ingredients and turn it on that I love it.  I literally have collected a bunch of recipes.  This past week I have made crock pot chicken and biscuits, tastes like a crock pot chicken pot pie.  Apple pie pork chops, and crock pot canjun jambalaya. 

Since I have this Friday off I'll probably do pork chops and stuffing.  Danish Man loves my crockpot chicken enchiladas.  Some days it is as simple as throwing in a protein such as chicken or pork and some BBQ sauce and turning it on low.  Come home shred the meat with forks and viola, pulled pork or chicken sandwich.  Also take a tough cut of meat that is usually chewy like pork loins and you can cook it on low with rootbeer and then at the end drain the root beer shred the pork and add BBQ sauce, place that on a roll and go to town.  I have plenty of recipes if you have any favorites in mind and i'm sure others do too.
