    I'm saving this recipe and making them for Thanksgiving!! They look so good! I might make mine just a touch bigger though, lol. I don't want to feel too bad if I eat a handful instead of a couple, lol.

    I thought of substituting with cherry, because cherry pie is BF's favorite dessert.

    Ray - I think the best way would be to create a berry filling of your choice (mashed berries mixed with sugar, etc), and spread a little of that in the center instead of the piece of apple. It would probably have to be a fairly small amount so that you don't have cookie-pies busting open in your oven.

    For some reason I read that about four times through and saw "mashed potatoes mixed with sugar" each time, lol. I was so confused and was starting to wonder about what kind of food you make, lol.

    I didn't mean for that to be a p&r yesterday LOL

    I posted & then left work a few minutes later & had to finish my thank you cards last night so I banned myself from the internet for the night. 

    Glad everyone likes the recipe!!  I feel like I would screw them up if I tried to make them but maybe I'll give it a go anyways.
